Salep @ Demirović

I have Salep at Caffe Slastičarna Demirović, a cafe full of history since 1892. And the Salep I have is totally different from the one I had in Istanbul. This version is strongly scented with cinnamon and cloves, just too sweet. Salep, also spelled sahlep or sahlab, is a flour made from the tubers of the orchid. These tubers contain a nutritious, starchy polysaccharide called glucomannan. Salep flour is consumed in beverages and desserts, especially in the cuisines of the former Ottoman Empire, it is a traditional winter beverage.
