I have high expectations of paradores. Puebla de Sanabria met my expectations. The receptionist arranged for an on time taxi to get me to the station (see below), and even advised me that an imminent fire alarm was just a drill (I was in the garden reading). I didn't have breakfast, but dinner was very good. The property is just a few minutes from the bridge below the stunning castle. Puebla de Sanabria is a truly lovely village. (Note: I was there on weekdays in early October. I don't know about summer weekends!)
Note that if you arrive on a long distance train, the station is quite far away, there's no sidewalks for much of the way, and I didn't see a taxi coming or going. You need to get a hotel to book one, or do it yourself, in advance. (A lovely resident on my arriving train saw my plight and bailed me out. I am grateful for that.)
