The famous Qinghai–Tibet Railway connects Xining and Lhasa across some of the most remote and spectacular landscapes in the world. But after spending 24 hours here before boarding the famous Qinghai–Tibet Railway, I realized Xining deserves far more attention than it gets. The local cuisine is heavily influenced by Muslim traditions and is very different from what we ate in eastern China.
