The builders of Matsue Castle: father and son Horio Yoshiharu and Horio Tadauji. Matsue Castle was first constructed in 1607 (Keichō 12). The first lord, Horio Yoshiharu, chose the site and started construction, and his son Horio Tadauji continued and completed the entire project. The main structure of the castle was finished in 1613. It is a representative hirayama-style castle in the San’in region. Matsudaira Naomasa (1624–1676) was the grandson of Tokugawa Ieyasu. His father was Matsudaira Tadayoshi, the fourth son of Tokugawa Ieyasu, making Naomasa a close relative of the Tokugawa family and core bloodline of the Tokugawa shogunate. Early in life, he was granted a separate domain. In 1638, the shogunate transferred him to Izumo Province’s Matsue Domain, where he became the first Tokugawa-affiliated lord of Matsue, founding the second ruling family of Matsue Castle after the Horio clan. During the Winter Siege of Osaka in 1614 (Keichō 19), Naomasa’s mother, Gesshō-in, encouraged her 14-year-old son before his first battle: “You are the grandson of Tokugawa Ieyasu, and your father Yūki Hideyasu was a great general. Fight bravely and don’t lose to your father.” She also sewed a horse emblem (unit flag) for him. The Echizen and Kaga units rushed forward toward Sanadamaru, but the archers fiercely retreated. At that moment, a commander stepped forward. It was Naomasa. His attendant Amakata Tsūzō stopped his horse and tried to persuade him: “What does it mean for the general to lead the charge?” Naomasa pressed on. Tsūzō blocked the arrow fence again. Sanada Yukimura, the castle commander, saw the repeated struggle between lord and attendant at the arrow fence. Let me introduce you to a soba restaurant that serves the famous local delicacy of Echizen City, "Oroshi Soba," which is highly praised by locals. Echizen City in Fukui Prefecture is renowned for its soba noodles. Among them, "Oroshi Soba" is particularly famous. This dish is made by combining the local specialty vegetable, spicy grated daikon radish, with dipping sauce. The sharp spiciness of the radish pairs perfectly with the thick hand-made soba noodles! At Yukian Kameya, you can enjoy especially spicy grated daikon radish. This spiciness is sharp and pungent, similar to wasabi, and it’s so addictive that I’ve visited several times myself 🤤 (It also pairs wonderfully with sake◎◎). Echizen Soba no Sato @ Echizen City: Premium Grated Daikon Soba Desiring to sample authentic Echizen soba, I headed to Echizen Soba no Sato, a tourist hub in Echizen City. Attached to a souvenir shop, the spacious interior is a popular stop for groups and tour buses, truly reminiscent of an "Echizen soba theme park." It also houses a noodle factory, where you can experience soba making and even buy it directly from the shop. Though I arrived five minutes before opening, there was already a line of about 20 people. Thanks to the spaciousness of the restaurant, I was able to enter on the first round and was shown to a cozy hearth-style seating area. Naturally, I ordered the signature "Premium Grated Daikon Soba." The soba noodles served were thick, rustic, with a rich aroma and a chewy texture. Topped with generous amounts of spicy grated daikon radish, the refreshing spiciness of the soy sauce-flavored broth really brought the dish together. The more I ate, the more refreshing it became, and I finished it in no time. As expected, eating Echizen Oroshi Soba in its original place was exceptional. The only regret was that I couldn't order a large portion. The perfection of the dish made me wish I could have enjoyed more of it.
