Joel Robuchon香港的tasting menu吃过很多次，印象一直普通，感觉就是二星有余三星不足。这次让服务员推荐单点四道菜之后，每一道都让我惊喜，一餐过后我彻底喜欢上了joel robuchon，当晚就呼朋唤友约好了下一餐。robuchon的经典面包蓝（图5），吃不完可以打包带走，当然没人会打包，不管这种管饱管够的态度我还是很喜欢的。附赠的炸虾（图6），口感很不错只不过酱汁味道可能因为个人喜好我不是特别喜欢。第一道头盘（图3）是Langoustine carpaccio with citrus and espelette pepper，crispy sea urchin waffle（小龙虾搭配海胆，配海胆香脆华夫饼）。第一次点这道菜，非常惊艳，langoustine carpaccio的新鲜，sea urchin的甜味，pepper和citrus浓重的味道，配合在一起非常和谐。附送的香脆海胆华夫饼没有入镜但是非常好吃，香脆却不油腻，搭配carpaccio简直是满分。第二道菜（图2）是pan fried duck foie gras with cherry confit and crunchy almonds 香煎鸭肝配渍樱桃和杏仁脆片。香煎鹅肝和渍樱桃的搭配非常和谐，鹅肝虽油腻却味道十足，让人忍不住一口接一口。但我觉得如果可以不要杏仁脆片就好了，杏仁口感也属于厚重的，搭配鸭肝感觉有点too much。但总体这道菜我非常喜欢。第三道是主食小羊排（图四）milk fed lamb cutlets with fresh thyme。 这是几道菜中我觉得最中规中矩的，但是味道也十分好。肉质恰到好处，也十分入味，和其他三道比这道没有那么WOW，但餐后自己回想，确实也是很好吃的。第四道（图一）招牌之一的海胆意面spaghetti with a poached egg and sea urchin。这道菜我至少吃过三次，类似的菜再去别的餐厅也算过很多次。之前在joel robuchon我觉得它做的非常普通不够入味，不知道是不是改良了，这次吃到完全是惊艳到了。poached egg让面整体口感非常顺滑，海胆的甜完全展示在面里，并且味道十足非常juicy。这餐吃完100[%]满足，完全颠覆了我之前对robuchon的印象，绝对三星水准，推荐。
